Popular Birmingham restaurant set to open its doors after refurb

Bill’s Restaurant and Bar in the cities Bullring shopping centre is set for a grand re-opening on Monday 1st July after a major transformation to appeal to a new generation of diners.

The eatery, founded by Sussex greengrocer, Bill Collison, will celebrate the relaunch with a number of activities aimed at shoppers, including a ‘Wheel of Fortune’ game in Rotunda Square on on 5th July with hundreds of prizes to give away, as well as a partnership with Aperol which will see two pop-ups on Saturday 13th July and Saturday 20th May between 5pm and 9pm. Bill Collison, founder of Bill’s, said:

“Good quality food in a welcoming environment has always been at the core of Bill’s, which we why we felt a fresh new look for Birmingham was necessary.

"We are proud to create restaurants that are full of vibrant colour and I believe that the new look transcends all dining times which will only enhance our diners experience and showcase our food and drink offering.”

The improved restaurant will add a new dimension to Birmingham's dining scene which is already regarded as one of the UK's most culturally diverse and bosses insist that food is still at the very core of every Bill’s restaurant.

The eateries menu has a strong emphasis on vegetarian food and fresh produce with seasonal changes to their menus bringing dishes including Kale, Chickpea and Miso Hummus Salad and Paprika, Garlic and Chilli Roasted Chicken.

There will be a range of cocktails added to the menu for Brummies to enjoy including a Rose Sangria and Watermelon & Ginger Margarita.

The restaurants grand re-opening takes place on July 1st at their Bullring branch.
